Pad Thai
Ingredients
6 ounces flat rice noodles (middle size)
1/2 bunch of onion
3 tablespoons vegetable oil
3 ounces firm tofu, diced deveined shrimp or boneless chicken
3 eggs, beaten
3 table spoon garlic
1/4 cup lemon or tammarin juice
1/4 cup fish sauce and ¼ cup soy sauce and ¼ cup oyster sauce
2 tablespoons palm sugar or brown sugar
1/2 to 1 teaspoon roasted chile paste
1 tablespoon dried shrimp
2 tablespoons finely chopped dry-roasted peanuts 2 table spoon chopped dried reddish
1 cup bean sprouts
Directions
Soften the noodles following to the directions (noodles need to soak in warm water for about 15 minutes), and drain.
Heat a wok over high heat. Add 1 tablespoon of the oil, fry egg , about 2 minute. Add 1 more tablespoon of oil to wok. Add the tofu, chicken or shrimp, salt and paprika, and stirfry until cooked through and browned, about 3 to 5 minutes. Transfer everything from wok to a bowl.
Reheat wok and add remaining tablespoon oil. Add the garlic and stirfry until aromas are released, about 10 seconds. Add the tammarin juice, fish sauce, soy sauce, oyster sauce, brown sugar, and heat through. Add the drained noodles and toss until the noodles have absorbed most of the sauce, about 3 minutes. Add the red chile paste, dried shrimp, ground peanuts, reddish, bean sprouts, and reserved tofu, chicken or shrimp and eggs, and toss thoroughly.

4 stalks lemongrass
6 cloves garlic, sliced very thin
1 ½ inches fresh galanga root (Kha), sliced very thin
1 Lime only
green chiles, seeded, sliced very thin
1 pinch sugar
1 Tomato slice 4 pieces , green onion
15oz mushrooms
1 lb 26/30 shrimp
lime juice
Fish sauce (nam pla)
5 leaves Kafir lime
Procedure
- Trim and discard the root and the top 2/3rds of the lemongrass; julienne the bottom 1/3
- Bring the stock, lemongrass, garlic, galanga, lime zest, chiles, sugar to a boil; reduce the heat and simmer for 20 minutes
- Return to the pot, and bring to a gentle boil
- Add the mushrooms and cook for 1 minute
- Add the shrimp and cook until just done
- Remove from the heat
- Add the lime juice and nam pla; tomato, green union.
