Sean- there are a lot of ideas for adaptive gardening out there. Some simple ideas include raised planting beds, seating devices for use in gardens, drip irrigation, long handled and other ergonomically designed tools, etc. It might be best to problem solve around very specific locations and types of plantings. I could dig up some printed or web resources if you wanted.
No knowledge of competitive sporting for those with disability. I recall that the skiforall folks had broadened their scope of activities, but I don't have recent knowledge about them. Not a local source, but also see http://www.makoa.org/sports.htm
