Tom Micklin, instructor for Chocolates, Caramels and Confections has spent a lifetime baking, making chocolates and developing products for bakeries. He started young, learning basic baking techniques in his father's hotel kitchen. Later, he was trained in classic European baking and pastry craft, which led him to his position as Director of Bakeries for Larry's Markets for most of the 1990s.
Karen Bennet, co-instructor, is Tom's business partner at Samadhi Chocolates, where she handles the marketing and does most of the baking.
