Below, I created a recipe using sustainable, nutritious, and delicious ingredients that embody the human spirit of overcoming adversity with style and gusto.<\/p>\n<p><u>Recipe: Kimchi Fried Rice with Grasshopper and Wakame Salad \u2013 Surf and Turf of the Anthropocene<\/u><\/p>\n<p>&nbsp;<\/p>\n<p>Kimchi Fried Rice:<\/p>\n<ul>\n<li>1 cup Kimchi (homemade or store-bought), chopped<\/li>\n<li>4 cups cooked rice<\/li>\n<li>2 Tbsp. vegetable oil<\/li>\n<li>\u00bc cold water<\/li>\n<li>1 green onion, chopped, to garnish<\/li>\n<li>2 Tbsp. gochujang (chili paste)<\/li>\n<li>3 tsp sesame oil<\/li>\n<li>1 Tbsp. sesame seeds, to garnish<\/li>\n<li>Kosher salt<\/li>\n<li>Grasshoppers<\/li>\n<li>12 washed Grasshoppers, wings and legs removed<\/li>\n<li>1 green onion, chopped<\/li>\n<li>1 Tbsp. vegetable oil<\/li>\n<li>1 tsp freshly grated ginger<\/li>\n<li>2 cloves garlic, minced<\/li>\n<li>1 tsp sesame oil<\/li>\n<li>Kosher salt<\/li>\n<\/ul>\n<p>Wakame Salad<\/p>\n<ul>\n<li>\u00a0\u00bd oz dried wakame seaweed, cut<\/li>\n<li>1 small cucumber, julienned<\/li>\n<li>1 cup kale, cut in ribbons<\/li>\n<li>1 tsp sesame seeds<\/li>\n<li>1.5 Tbsp. rice wine vinegar<\/li>\n<li>1.5 Tbsp. soy sauce<\/li>\n<li>1 clove garlic, minced<\/li>\n<li>\u00bd tsp fresh ginger, minced<\/li>\n<li>1 Tbsp. sesame oil<\/li>\n<li>\u00bd tsp brown sugar<\/li>\n<\/ul>\n<p>&nbsp;<\/p>\n<ol>\n<li>Wash and cook rice<\/li>\n<li>Combine the rice wine vinegar, soy sauce, 1 clove of minced garlic, \u00bd tsp of freshly minced ginger, 1 Tbsp. sesame oil, and brown sugar to make salad dressing. Set aside.<\/li>\n<li>Cover seaweed with warm water and soak for 5 minutes. Lay on paper towel to drain<\/li>\n<li>Heat up large pan and add 2 Tbsp. vegetable oil.<\/li>\n<li>Add kimchi to the oil and stir fry for 1 minute.<\/li>\n<li>Add rice, remaining kimchi juice, and gochujang. Stir for 7 minutes, adding cold water to prevent the rice from sticking and burning to the pan.<\/li>\n<li>Add 3 tsp of sesame oil.<\/li>\n<li>Cover and remove from heat.<\/li>\n<li>In a separate pan, heat up 1 Tbsp. vegetable oil.<\/li>\n<li>Add 1 tsp freshly grated ginger, 2 cloves of minced garlic, and chopped green onion to oil and cook until it is aromatic.<\/li>\n<li>Add grasshoppers and kosher salt to the pan, and saut\u00e9 on medium low for 10-15 minutes, stirring occasionally.<\/li>\n<li>Toss the cooked grasshoppers in sesame oil.<\/li>\n<li>Garnish the fried rice with grasshoppers, green onion, and sesame seeds.<\/li>\n<li>Toss the seaweed, cucumber, and kale with the salad dressing and sprinkle with sesame seeds.<\/li>\n<li>Serve fried rice with the salad.<\/li>\n<\/ol>\n<p>&nbsp;<\/p>\n","protected":false},"excerpt":{"rendered":"<p>As I contemplated what it means and will mean to be a person in the Anthropocene, I decided that the perfect representation of hope and survival would be to decide what we will be eating in the next 50-75 years.
