OATMEAL APRICOT COOKIES

 

1 c. corn oil (190 g)

2 eggs

1/3 c. milk (75 g)

1.5 tsp vanilla extract

1 tsp baking soda

3 c. old fashioned rolled oats (not quick-cooking, 560g)

2.5 c. whole wheat flour (300g)

1.5 c. brown sugar (170g)

1 package dried apricots, chopped small (500g)

3/4 c. walnuts, chopped (250g)

1 tsp salt

0.5 tsp cinnamon

 

Mix together dry ingredients, set aside.  Beat oil and eggs.  Mix milk, soda and vanilla and mix with oil and eggs.  Add to dry ingredients.  Drop onto lightly greased or parchment-covered cookie sheets.  Bake 325o F (163o C) for 17-20 minutes.  Take them out before they get too brown.
