Ingredients |
|
cherry tomatoes (1:1 weight ratio to your pasta), olive oil, fresh garlic and basil (if your basil isnt fresh, faggedaboudit)
|

Instructions |
|
Slice partially through your cherry tomatoes (don't toss the inner goo or skin, they account for a majority of your nutrients!).
Add garlic and oil to pan on high heat then add tomatoes.
Allow to simmer a good 20-25 minutes until the consistency thickens.
Wait until the last possible minute to cut and add your basil.

Our good ex-Texan friend, Bill, taught this to us our second night in Rome, illuminating us to the simple nature of yummy Italian pasta sauce. Even a clueless student, thousands of miles from their mommy, could manage these instructions. Lucky us.
