Panna Cotta (Cream Custard)

Ingredients |

Ten ounces of double (heavy) cream, two tablespoons of sugar, eight drops of vanilla essence, and one teaspoon powdered gelatin (or two sheets of hard gelatin).

Instructions |

Simmer the cream with the sugar and vanilla for 2-3 minutes. Dissolve the gelatin (do not use more or the cream will be rubbery) in two tablespoons of cold water and beat well into the cream. Pour into a little serving bowl or four small ramekins. As the cream is very rich, portions are best small. Chill for a few hours.
For Panna Cotta with Coffee increase gelatin to one and a half teaspoons (three sheets) and add one-quarter cup of black coffee.
