Panna Cotta (Cream Custard)

  Ingredients
 


Ten ounces of double (heavy) cream, two tablespoons of sugar,
eight drops of vanilla essence, and one teaspoon powdered gelatin (or two sheets of hard gelatin).

 
   
  Instructions
 


Simmer the cream with the sugar and vanilla for 2-3 minutes. Dissolve the gelatin (do not use more or the cream will be rubbery) in two tablespoons of cold water and beat well into the cream. Pour into a little serving bowl or four small ramekins. As the cream is very rich, portions are best small. Chill for a few hours.

For Panna Cotta with Coffee increase gelatin to one and a half teaspoons (three sheets) and add one-quarter cup of black coffee.
