Tortellini with Pesto and Accompaniments

  Ingredients
 


Fresh spinach and ricotta tortellini
Pesto
Sliced turkey ("Tacchino") -- 2 etti works well
Spinach
Fresh Pecorino
Ciabatta
Olive oil
Good balsamic vinegar

 
   
  Instructions
 


While the water boils, make the tacchino rolls. Cut the Pecorino into small chunks and wrap them to bite size with slices of turkey. Boil the spinach until soft. Dry well. Wrap each turkey roll in a spinach leaf.

With the water still boiling, add the pasta. Cook for 5 minutes. Drain and toss in the pot with the pesto.

Slice the ciabatta and serve with the tortellini and rolls.

I invented this recipe when I decided to invite some people over for lunch. It is extremely easy and delicious, as well as being impressive for the amount of time it takes to prepare.
