Tomato and Mozzarella Bruschetta

  Ingredients
 


- 4 thick slices of crusty bread
- 4 tomatoes, chopped
- 3 tbs chopped basil
-25 g black olives, quartered or sliced
-2 tbs olive oil
-75 g mozzarella, sliced

 
   
  Instructions
 


Toast the bread and spread with 2 tbs chopped basil

Arrange the mozzarella, tomatoes, and olives on top of the bread slices. Mix together the oil and remaining basil and drizzle this mixture over the bruschetta.

Place under a hot grill for 2-3 minutes and serve warm.

Bruschetta is a very simple hor'deurve to make and it's one of my favorite things to eat, so I've been making it for years. The great thing about it is that you can put whatever you want on and you can experiment with different ingredients. I think it's great with a little meat or with grilled onions, but this recipe is good because it's very simple to make and we can get everything we need right here in the Campo.
