This is the old fashioned way to make tiramisu which is NOT advisable for older folks, children or anyone pregnant due to raw eggs. Buy the freshest eggs you can for this and consume within two days of making it. You can eliminate the salmonella factor if you beat sugar and egg yolks over a double boiler but here is the old fashioned (and thus DANGEROUS) version of TIRAMISU.

Ingredients:
• ESPRESSO COFFEE, 1/2 cup
• milk 1/2 cup
• rum or marsala, 3 tablespoons
• MASCARPONE, 500 grams (trader joe’s has it in 250 g containers!)
• EGGS, 4 separated
• SUGAR, ½ cup
• VANILLA, 1/2 teaspoon vanilla
• SALT, a pinch
• COCOA POWDER, enough to sprinkle
• 40 lady fingers or “savoiardi” (Trader Joe has them!)

Instructions:
-Combine the espresso, milk and 3 tablespoons rum, set aside.

-Combine the mascarpone and the 3 tablespoons of rum and vanilla in a large bowl, beat until smooth.

-In a medium bowl, beat the eggs yolks, and 3 tablespoons of the sugar together until smooth.

-Beat cold eggwhites and pinch of salt in cold bowl on HIGH until stiff peaks form and then add sugar (takes a while… 5 min?)

-Fold the egg whites, all at once into the mascarpone.

-Dip your lady fingers in the espresso/milk/rum liquid and lay the ladyfingers side by side in the serving dish so as to layer the dish.

-spread the cheese/sugar spread over lady fingers.

-if you have enough for a second layer of cookies dip away and repeat the above.

-sprinkle top and last layer of cheese spread with cocoa dust (use a sieve to sprinkle it) and there you have it! Authentic TIRAMISU.
