The owner was somewhat standoffish in the beginning, but quickly opened up to my questions, and even showed us The Back Room, where they do their own bean roasting over a wood-fire stove. The caffe has been open for around 70 years, and Mr. Starbuck's himself came to visit, right before his empire began... coincidence? We think not! They have a very specific barista for their very specific beans. All along the walls are ancient coffee grinders and brewers. Around 8.30am, all of the local businessmen are drifting in for their morning fix, which is fun to watch.

The cappachino was, in the beginning, nothing out of the ordinary. Then the foam cleared, and I began to understand why this is considered the best cup in Roma (and to some, the best cup anywhere): smooth as chocolate, no burnt aftertaste, just delicious warmth all the way down, the way coffee ought to be. If you go, ask the owner to show you his Back Room with the wood-fire roaster.
(an unnamed source) 'If the quality assurance guy at Italy's leading cofee maker cannot score a good espresso under dirct supervision, what hope is there for the rest of us? My solution is simple. When the need for real espresso becomes overpowering, but a ticket to Rome, tell the tazi driver to hear straight for the Sant' Eustachio cafe. The espresso will be perfect.' The cafe has been reviewed and recieved awards from the following groups: Let's go 1999 and 2000, Rover the Top 2000, Le Guide du Routard 1999, Cafe Creme Guide to Cafes 2000 and 2001, Segnalato dalla Guida Rome 2000 and 2001, TimeOut, and Roma del Gambero Rosso 2002. Impressive!
