Fresh Greens with Walnuts, Pears and Feta

1) ~6 cups of fresh Greens (lettuce, spinach, or any mild, leafy salad vegetable you prefer)

2) ~1 cup of Feta cheese

3) ~1 cup of Walnuts

4) ~1.5 cups of Pears
 
   
  Instructions
 
This may be one of the easiest salads to prepare. Simply tear lettuce leaves, crumble the feta cheese and chop the walnuts. Mix all of these together, saving a few tablespoons of the walnuts and feta cheese for garnishing the top. It is important to prepare the pears just before serving, by removing their cores and dicing, so that they do not brown with exposure to air. A few minutes prior to serving, mix in the pear pieces, also saving a few tablespoons for garnishing. After thorough mixing the main ingredients, garnish with remaining walnuts, feta cheese and pears for an aesthetic effect.
 
   
  Story
 
The women of the Campo de Fiori made this salad for our potluck at Lisa’s apartment. Although it was not based on a recipe, many similar salads made with candied walnuts, blue cheese and spinach are available at restaurants. Using ingredients easily available at the nearby fresh fruit and vegetable market and supermarket, we were able to recreate a mixture of sweet, salt and crunch to dress up the fresh greens.

I recommend this recipe because of its excellent flavor, ease of preparation, and good nutritional value.
