If everyone were vegetarian climate change would probably stop. 80 percent of deforestation rates are because of cattle production according to the the Yale school of forestry and environmental studies. Killing the forests kills the earths lungs, which in turn causes temperatures to increase even more since the trees are what take CO2 out of the atmosphere. If the trees were saved and climate change were stopped, this would stop the droughts that are causing decreased agriculture production and people all over the world to starve.
You can't just force the worlds population to be vegetarian. That seems kind of absurd. We can reduce deforestation by doing the alternative, instead of killing trees we can put cattle in areas where there is farmland like North Dakota, Wyoming, Montana, and other states with high percentages of farmland. Also, we can plant trees to make up for this, even though it takes several years for a tree to grow and make a difference, but if we plant now we can help save the environment for future generations. Temperature increase is going to happen whether we like it or not, all we can do is inform people of the situation. It's hard to force seven billion people to help fight against climate change. Also, droughts are going to happen they have been happening since man first existed. We just have to act smartly, and inform others of what is going on in our world.

There is no evidence that by people eating vegetarian diets climate change would stop. Deforestation caused by cattle production is only happen in large amount in the Amazon area according to Yale University. You must consider the rest of the world when talking about climate change. CO2 is not the only gas that is contributing to global warming. Other gasses also must eliminated. Trees can only help so much. There also must be a reduction of burning of fossil fuels. It is important to take these in to consideration when considering climate change. Have you tried to make a difference in climate change? Maybe you should try to plant some trees or plants to help. Every plant helps.

could you imagine the problems brought about the world demand for fresh produce suddenly multiplied by 50%. If you took away peoples lives by shutting down markets for meat. The world could handle such a sudden change, and the the land you saved from being land would only become farmland.
This is one the most absurd ways to decrease climate change I've ever heard of. You would be asking everybody to change to a plant based diet. The reasoning for deforestation isn't due to cattle, the only area that has this problem is in the Amazon. You would be taking the land that was for cattle, and changing it into farm land for crops. Which would lead to more deforestation, and more c02 released from farm equipment.
Even so Jair Bolsonaro, the president of Brazil, was discovered helping burn down the amazon in order to plant more soy beans. The economy in Brazil was at such a critical state that he thought that was the only option. In order for everyone to go vegetarian we need to make sure we have enough food for everyone to do so, meaning we have to make more room for farming. Not to mention that the price will go up for produce to accommodate for the growing demand. I think that your goal was to stop burning down trees but people burn down forests to make room for growing plants, not for raising cattle. It was a good idea it would just be impossible to live like that without serious repercussions.
The problem with eating meat isn't the actual meat itself, but the way it's produced. If everyone were to collectively stop eating meat, all of the land being burned for cattle farms would just be used for plant based foods and it would end up having very similar effects. Even as it is now, much of the land being burned for food production is actually to grow things like soy and corn.
